What Makes Ceremonial Matcha Different?
Unlike standard matcha, which can be harvested multiple times a year, ceremonial matcha is exclusively made from the first flush of tea leaves. These leaves are shade-grown for several weeks, allowing them to develop a richer flavour, higher levels of chlorophyll, and a potent concentration of antioxidants. This careful cultivation method results in a matcha that is smoother, sweeter, and richer in umami, ideal for the seasoned matcha lover.
In contrast, standard matcha is often produced from leaves harvested later in the season, which tend to have a stronger, more bitter flavour, making them better suited for culinary use.
How to Enjoy
Ceremonial grade matcha can be severed in its pure form, showcasing its naturally sweet and umami-rich flavours. While it can be prepared traditionally with just water, it is also perfect for lattes or smoothies.
For drinks, the suggested serving size is around 2g (about 1 teaspoon). You can adjust based on the strength and size of your drink. As ceremonial matcha has a smooth, earthy flavour, if you're new to matcha, you may consider adding a touch of honey, maple syrup, or stevia to balance its natural bitter and grassy notes.
Simple Matcha Latte Recipe
- Add ½ - 1 teaspoon (2g) of matcha to a cup or bowl
- Add hot water (not boiling)
- Use a bamboo whisk or electric frother to whisk vigorously until smooth and frothy
- Add your favourite milk (hot or cold) and sweetener if desired
- Enjoy hot or over ice for an iced latte
